MasterChef judge Melissa Leong reveals the simple trick Italians use to get the PERFECT pasta sauce

‘This is undeniable skill here’: MasterChef judge reveal the simple hack Italians use to make the perfect pasta sauce… and it has NOTHING to do with the ingredients

MasterChef contestant Laura Sharrad left the judges in awe of her perfect pasta dish on Thursday’s episode of the hit cooking show.

But it wasn’t the ingredients she used to make her garganelli mouth-watering, but rather her incredible technique.

‘Textbook garganelli. Cooked perfectly al dente,’ commented judge Jock Zonfrillo after sampling the dish.

‘Just a note for me on the skill in the sauce. There is the right amount of liquid to fat there to create the perfect sauce, which just sucks into the pasta.’

According to Jock, 43, adding a small amount of fat in the form of olive oil or butter is essential to creating a flavoursome pasta sauce and enhancing the texture.

Meanwhile, fellow judge Melissa Leong agreed.

She said that her husband is Italian and she’s picked up a few tricks while watching him and his family cook pasta.

The 40-year-old food critic said it ultimately all comes down to how the sauce is mixed through the pasta after being cooked.

‘My married family is Italian, and whenever I’m watching my mother-in-law or my husband, Joe, you know, coating the pasta right at the end,’ she explained.

‘I mean, there’s just such skill in that emulsification of the sauce. And this is undeniable skill here.’

She added: ‘As rustic and as gorgeous as it looks in that simplicity, it’s the height of what it should be and what it could be.’

Meanwhile, fellow judge Andy Allen said he was loving the hint of chilli Laura had injected into her dish.

‘It just makes you want to go back in and dive back in. It’s a really well-rounded plate of food,’ the 31-year-old former MasterChef winner concluded.
